Very successful with such simple ingredients. What is the function of the mix of soda water etc on filo? It worked so well I’m wondering where else it can be substituted for layers of butter.

Great to hear! Not sure about the exact chemistry at work, but the soda water helps make the pastry crispy. I've tried other liquids, too, but the one with soda water makes all the difference for getting the correct texture of these böreks.

Hi Vidar. This recipe looks lovely but we don't eat beef so I wonder, would it work with minced lamb instead?

Lamb should work a treat!

And I know it's not your question, but if anyone else is reading this and wondering if they can use vegan mince instead, the answer to that would be no – it'd likely be too bland. Since there are few spices in the mix, the flavour of the meat is important here. So lamb yes, vegan mince no :)
