Brilliant!! This is just brilliant. I too use a peeler on tomatoes and thought I was such a genius one day when I thought of it. It makes me laugh to think it took me years to grab a peeler and give it a try. But the box grater? That is just brilliant. Thank you so much for sharing. I can't wait to try some of the recipes above and the box grater method. Unfortunately here in Texas, USA our tomato season has burned up. We are too hot now for good home grown tomatoes with temperatures at 100 degrees. Quick little story - I purchase my home grown tomatoes from a retired man and his wife in town, that literally grow thousands of tomato plants in their back yard as a hobby. This year was the first year they took me back to see their garden and I have never in my life seen tomato plant tunnels. There were so many plants, the tops intertwined together making row after row of tunnels with tomato plant canopies. And thousands of tomatoes everywhere. It was a sight to behold and one heck of a hobby.
