Sounds perfect for a summer's day and a great use of freshly picked tomatoes, cucumbers and home-grown herbs. Have only just planted my cucumber plants, so will have to be patient for the next few weeks until I can start picking

Any white beans that you like will work wonders here, but cannellini beans (navy beans if you're in the US) should be an excellent choice. In Turkey, I prefer varieties called şeker or ispir.
